And they're off...


Dodging intermittent storms, we have picked most of our white fruit. First was the Chardonnay from the blocks at All Saints and St Leonards. We hand-pick the oldest block for use in our Family Cellar and Wahgunyah wines. These are made in what is loosely described as a ‘Burgundian' technique. What this means is whole bunch picking and gentle pressing. The juice is settled overnight and then racked to barrel for fermentation. The wine then spends a year or so in the barrel with the yeast lees. These lees are regularly stirred with a stick (battonage in French which, like most things translated, sounds far sexier in the original). Then the wine is bottled.
